Dreyed Fish

Eating wind dried fish is a tradition here in Iceland. It's quite good, very healthy, and a magnificent source of protein. Although since it's best with a generous helping of butter perhaps it's not quite as healthy as it could be.
My friend started a start-up company called Arcticus Sea Products that makes these delicious dried fish bites from fish cuttings that used just to be waste from traditional fish processing, making a valuable and tasty product from something that before was just thrown away.
Here's their Facebook page.
