Hat and croziers

This man is a chef and owner of a restaurant in Gerona.

He was going to a protest march against unemployment in Spain. His suit was what made me stop and ask him what he was dressed.

I didn't understand his answer. I just realized that the restaurant is a Catalan Masia (a typical rural home), and his golden hat has some symbols of Catalan identity and the craft of cooking.
