Whiter than white

How do they stay so white?  The river is filthy.

Not the shot I wanted to blip but the picture of the wife eating lemons didn't get clearance and the pygmy woodpecker that visited our garden was too eratic to be caught as anything other than a blur at ISO800 and F5.6....
