The remains

of a deliciously pretentious meal. Vacherin de Haut-Doubs, or Mont d'Or: a raw cheese, made from the milk of cattle pastured at over 800m, or given hay in winter from the same meadows; boxed in spruce bands and only sold between September 10th and May 10th. A sort of fast-food fondue: leave it in the box, into a hot oven for 10 minutes and eat. We're lucky to have a French baker in the town, who sells cheese.
