Finocchio di Pinocchio

Fennel gratinated with Parmigiano

Trim the fennel bulbs (cut lengthwise & cut off the hard bottom).
Cook in boiling water until the bulbs are almost done.
Season with salt, white pepper and good balsamico.
Top with freshly grated parmesan.
Bake in hot oven until the cheese is golden brown.
