First Artichoke

The first artichoke of the season is always a nail-biter.  Harvest too soon, and it won't have reached its yummy potential.  A day or two late, and it's a beautiful, but woody, flower.  My one surviving artichoke plant (I think the neighborhood cats "watered" the other one too much) is starting to set buds.  I think this one will be dinner one night soon!
