Domestic Science!

Had the human boys today due to the teachers strike and Lennon went for a wander in the garden. He came back with some ripe strawberries and raspberries that he'd picked but he also asked if the other red berries were cranberries. I think he wanted to make cranberry juice but we told him they are redcurrants. Marlane usually makes them into redcurrant jelly but when Lennon asked what he could do with them she looked up some recipes and found one for redcurrant cake.

I went out with him to pick the currants and we got what we needed, 300 grams, and proceeded to make the cake. Lennon did a lot of it, weighing out, putting some of it into the food mixer, and then into the oven (I did that bit!).
We split it into two tins as it called for a 23cm tin but I only had 20cm tins and there seemed to be a lot of mixture.
They flattened a bit at the end but absolutely delicious. The sweetness of the cake and the sharpness of the redcurrants complimented each other very well.
