Satisfactory Choice

Here we are, thinking about food again. But I make no excuses.
Today it was home-baked pizza which took our fancy, and all thanks to the fact that we can now buy gluten free pizza bases at our local supermarket.
Although we both enjoy this favourite Italian dish, until quite recently it has been on the forbidden foods  list because of  the necessity to be sure it was gluten free. Thankfully the supermarkets and eating places are increasingly aware of the demands for gluten free food, that life for those who suffer an intolerance to gluten, are finding it much easier to find food that satisfies their needs.
Years ago we ourselves were not aware of  the necessity for keeping to a strict gluten-free diet and at that time pizza became one of our favourites, either as  snack or meal.
Yet after years of abstinence from pizza it was only recently that I discovered this specially prepared pizza base using rice flour instead of wheat flour. The topping is easy of course and can be whatever we choose — today’s was tomato paste, chopped tomatoes, mushroom, crayfish tails, and cheese.

It’s quick and straightforward to prepare and takes only 15 minutes to cook.  And my culinary skills are suitably extended to please the house.
