Sunshine soup.

This is one of 'A's favourite soups. He usually asks me to make it when I've just run out of sweetcorn or peppers..... Today I had both, and an onion, garlic, 2,yellow courgettes and a litre of stock.

Roast the veggies in the oven for 25 minutes, bring a pan of stock to the boil, add 500g of frozen sweetcorn and cook for 10 minutes. Add the roasted veggies, cook for another 5 minutes and liquidise. ( remove a cup of sweetcorn before liquidising if you want a few chunky bits in it).
