Cooking for three

Well, they say cooking for one is awkward, right? There's two of us here. If I cooked for four, I would only have to cook every second day. Either I'm getting my calculations wrong or one of us is eating too much 'coz I end up with only one portion for the following day. And that doesn't sort it!
