In the Style of the Shepherd

I realize this isn't the most exciting photo, but I assure you, the tacos al pastor (tacos in the style of the shepherd - referring to when lamb was used for this type of dish) at this busy stand were phenomenal.  Similar in concept to Greek gyros, this big hunk of pork is first marinated in pineapple juices (and you can see a roasting pineapple up at the very top), chili, and other spices, then slow-roasted against the vertical gas flame called a trompo. The resulting meat, thinly sliced is nothing short of  - - - out of this world. At only 12 pesos a piece (about 80 cents US, depending on the exchange) I will certainly be back for more.
