A load of old tripe.

The end of our Heritage Walk today round Hove Edge, near Brighouse, and we came to this derelict building, which used to be the tripe works.

I wonder if this would be your food heaven or food hell?

For those who don!t know,tripe is the type of edible lining from the stomach of various farm animals, mainly cattle..
To dress tripe, the stomachs are cleaned, and fat trimmed off. It is then boiled and bleached, giving it the white colour.

My dad loved it cooked in a white sauce with onions, and I can remember buying it at the tripe stall in Kirkgate Market.
Sadly I think all these stall have now closed, but I think some butchers still sell it.
It was popular in Victorian times, and still remains a popular dish in France and Italy.
I have never seen them cook it on Saturday Kitchen!

It was another interesting walk.
Special features included a former private railway system, stone mines and quarries,a house dating from 1500s, and of course the tripe works.
Nearly 60of us this time. Some people thought we were on a march or protest!
Nice to see so many people are interested in local history. Another enjoyable afternoon, but came a bit chilly towards the end.
