Meet Jay Fai. She's one of Bangkok's most famous chefs, single-handedly cooking six days a week on two charcoal fires controlled by an industrial blower (hence the need for goggles). The restaurant, Raan Jay Fai (her nickname translates as "Sister Mole"), is far from classy but it attracts the rich and famous. It's possibly the most expensive street food I've seen in Asia; her signature dish of drunken noodles costs 400-500฿ (depending on the market price of seafood that day), which is about £10. It's worth every penny and I've eaten there about five times in the last two years. Most of her dishes are packed full of seafood, especially her popular crab omelette which has about 500g of tender crab meat and a crazy price to go with it. Apparently she's been cooking for over 60 years and hopefully she has no plans to stop anytime soon.
