Apples and Oranges

School is finished for this semester and we had our Christmas party today. Not at the school, though, but another location. I think it's an old movie theater, but I'm not sure. 
During the afternoon I've been making mums pralines. I've tempered the chocolate, melted 2/3 over boiled water and then melted the rest with the warm chocolate. This, I've heard, is done so you can have the chocolate in room temperature without it melting. I've done two fillings so far, one with nougat and one with white chocolate and lemon zest, and have one more to make tomorrow.
