Heart Felt: Christmas Scene with Beetroot

My sister is extremely artistic and creative. Over the last couple of years she's been doing a lot of felting. She's done lots of amazing flat pictures, as well as a range of beautiful 3D pieces. This is a decoration she made which I think is wonderful. Though I must admit, while I get Santa and the trees, I'm struggling to remember where beetroot fits in the symbolism and traditions of Christmas! :))
