Between fen and mountains

There was not much incentive to go out today.  The wind is from the east and it has been grey and mizzling most of the day.  I decided to make a spelt sourdough loaf today.  I am getting to know the characteristics of the various grains.  The spelt flour kneads well with plenty of stretch but has less strength when bench resting and spreads out more than usual. No doubt it will taste fine.  The rest of the afternoon will be devoted to the rugby and The Tenant of Wildfelll Hall which I am reading at the moment.
