SEVILLES & BLOOD ORANGES

Did most of the preparation yesterday - the simmering of the fruit with the juice & pips of three lemons (two hours) - the scooping out & sieving of the pulp...

Today is was the infinity job of cutting up the peel followed by twenty minutes fast boiling, stirring all the while until I got a 'set'.

I love to hear the little clicks that the lids make as the vacuum kicks in!
