EB Pumpkin

We have friends coming for lunch tomorrow. They requested something light as are going on to dinner elsewhere.

I can relate to that request when travelling.
Not that it's any easier deciding what to serve.

This is one of the pumpkins we grew so I am making some mini quiches to have with salad.

I remember when I lived in England pumpkin was considered food only fit for cows. Is that still the case?
I love it, especially baked or in soup or other dishes.
Boiled isn't very interesting.
