Blanching Tomatoes

The sunshine was too hot to do anything outside today. I spent the morning turning a glut of small tomatoes into paste. In this shot I have covered some of them with boiling water to make them easier to skin. The result is 12 frozen cubes of a rich tomato flavoured paste, each one can be the base of pasta sauce, or topping for a pizza, or a boost to winter soup. It’s pure tomato. Other ingredients can be added when required.
