Worth waiting for

Not 8.55 am. 
Not 8.55 pm. 
It's 8 hours 55 minutes remaining of the 10 hour cooking time for lamb shanks. 
Sealed in a fry pan with just salt and pepper,and will be devoured with oven roasted yams and peppers, with steamed asparagus with broccoli. (Unfortunately, we can't use any garlic due to an allergy.) 
But when did lamb shanks get so expensive? 
They used to be a cheap meal. 

Ah well.
