Sunny with high winds, but not cold

This morning Richard went back, and Alan took him to the airport.   He has enjoyed his stay, as have we.

So for me this morning, washing, cleaning but I have left the ironing until tomorrow.

Rested up a bit this afternoon, however, Alan made Red Pepper soup, as our cleaner had brought us a basket full of vegetables.

Hence the Pisto (stewed summer vegetables) featured for WhatsOnMyPlate today.   A typical Spanish dish of aubergine, peppers, courgette, onions, tomatoes.   We usually like to flavour it with Scotch Bonnet and add some chorrizo, which I did today.   Usually it is served with a fried egg or fish/meat.
