Aubergine.

There is a lot of controversy about salting aubergines....most of the time, I can't be bothered to do this, but today I had a new recipe to follow.

The teenagers got me a Rick Stein book for my birthday, so it was moussaka for dinner....aubergines were salted with Maldon salt crystals...

Not sure it made much difference, but the moussaka was delicious.
