Easter Sunday Carrot Cake

Katey, in New Zealand, blipped her friends 80th birthday featuring a carrot cake and it gave me the inspiration for todays' blip. I made our Easter Sunday Carrot Cake yesterday so dragged it out of the fridge (carefully of course) and took a couple of photographs of it.
It's only about 2 inches thick because it was made in a large rectangular 'tin'. I say 'tin' because it is one of those rubbery silicone baking things, aren't they fantastic!
Marlane gets the credit for the ploughing and the carrots, I simply cannot measure out equal squares for the portions. I did make the topping of butter, cream cheese and icing sugar, with a splash of vanilla essence.

Lovely and sunny here now, all it needs to do is WARM UP!!
