My Ma buys fresh vegetables daily from the street market. This is only part of what she has prepared to start cooking her daily selection of delicious vegetarian dishes. Today we'll see the cauliflower and potatoes become aloo ghobi. The eggplant has been charred on the gas flame, the skin blackened to a crisp. It will be peeled off, the flesh mashed up and added to a mix of tomatoes, onions and fresh spices and become a smoky bharta. The tori is from the zucchini family and will cooked in a pressure cooler with turmeric. I love eating like this. I wish I could cook like this. I miss nothing of the western world's popular foods - pizza, pasta, sushi, burgers and sandwiches.
