Asparagus

We went to a local Leith restaurant called Norn to celebrate our wedding anniversary.  I have been once before, but it was first time for my husband. I highly recommend it if you like fine dining in an informal setting.  There is only one menu - a tasting menu - but you can choose either 4 or 7 courses, and whether you want the accompanying widnes.  All produce is very carefully sourced - the chefs even go to beaches in East Lothian to forage for seaweed.  Each dish is presented by its chef who explains what it is. There were actually two pre courses, as well as a tiny chocolate at the end, but the portions are just right so we didn't feel overfull as often happens with tasting menus.  Every course was absolutely delicious.

This is a vegetable dish of asparagus, potatoes and a seaweed hollandaise sauce. Extras show one of the pre courses - more asparagus with a quail's egg, spinach puree and chive oil, and one of the chefs at work.  You can see them working hard but very quietly through the open window.
