Hot Day ...Cool Supper

We spent the day with the folks. Doctor appointments and shopping and lunch. When we took them home we found the freezer had a problem and all the food thawed out. We spent several hours cleaning it out and disposing of the food. Did I mention it was 90* outside! So by the time we got home and made dinner it was 9:00. Just the perfect evening for a cool summer salad.
