BANANA BREAD

100g sultanas
175g self-raising flour
1/2 tsp salt
125g unsalted butter, melted
150g sugar
2 lrg eggs
4 small, very ripe bananas, mashed
60g chopped walnuts
1 tsp vanilla extract


23 x 13 x 7cm loaf tin, buttered & floured

Preheat oven to 170º. Mix the melted butter & sugar, beat until blended. Beat in eggs one at a time, then the mashed bananas. Then stir in walnuts, sultanas & vanilla extract. Add flour a third at a time, stirring well after each bit. Scrape into loaf tin & bake in the middle of the oven for 1 - 1 1/4 hrs. Leave tin on rack to cool. Enjoy!
