Life in Newburgh on Ythan

A fungal cauliflower

This massive fungus grows as a parasite on the roots of pine trees  in summer and autumn and can reach a weight of several kilograms. Commonly referred to as the Wood Cauliflower, and formally as Sparassis crispa, this really is an impressive fungus.

The fungus is edible when young, but not when it turns brown, and makes excellent mushroom soup and fungal cauliflower cheese.
