Throughout much of the western world an enormous amount of food is wasted and it is estimated that the average amount of food wasted by Scottish households is £460 ($610) a year, or enough in a year to make 800,000,000 meals a year. (Extra) They are only a small nation so in Europe and USA it must be a considerable quantity.
With the pulp of many carved pumpkins about to be wasted in the run up to Halloween, the Edinburgh Farmers’ Market set up a stall to advise how the seeds and flesh can be used.  Recipe cards and samples were given of pumpkin seed brownies and a delicious pumpkin and apple risotto, with optional blue cheese added.
