Homemade Roasted Red Pepper and Tomato Soup with Homemade Wholemeal Pumpkin Spice Bagels

Let me set the scene...

It was a cold crisp sunny autumnal day. Jen and I wrapped up warm and went out for a lovely walk. On our return we had some lunch and then set to work on our Saturday feel good dinner.

For three fun hours we roasted, boiled, baked, rolled and blitzed our perfectly seasonal ingredients to make what you see above.

We picked this dinner as tomatoes and peppers are just coming to the end of their season so we wanted to get a pot of soup cooked and stored away in the freezer for the next few months. As for the bagels, well, pumpkin is synonymous with October and partnered with warming spices is the perfect accompaniment.

Looking forward to heating up a couple of bowls of the soup, splitting and toasting one of those bagels and enjoying a delicious healthy treat.
