Vegan Caribbean Comfort food

Today was our youngest son's 29th birthday, but since he is living in Australia we spoke with him at 6 am our time and it was very late for him. He is having a blast there and working very hard at law school. I had the day off and taught the mid- day barre/ballet with attitude class. This is the one i was certified in a few days ago. As i had only been focussing on the 4 blocks/songs that were on the test, i was quite rusty on the other 5. It was good enough, but not to my standards. I was too tired to practice friday morning (as i had worked all week and out every single night)...I will have to rectify that next class, as i co -teach with my supervisor! After class my amazing (& retired) sweetie and i made a fabulous vegan meal based on the class of comfort food we attended a week ago. Mac & cheese, Shepards pie, apple crostata, caeser salad and buns (3 hrs). As we aren't truly vegan we cooked a few steaks, which was a good thing as our mother/daughter guests love their meat. We had a really lovely and very filling evening with them. They very sadly lost a family member last October and we had been meaning to have them over...it just took us a little while.
