Banana Muffins

I make these from time to time when we have a few bananas that are over-ripe. Here is the recipe.

muffins:
1 and 1/2 cups flour
1/2 cup brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup mashed ripe banana (2-3 bananas)
1 large egg
1/4 cup butter blend spread, melted
1/4 cup buttermilk*
3 tbsp canola oil
1 tsp vanilla extract
1/3 cup chopped nuts, if desired

topping:
1/4 cup brown sugar
1 tsp cinnamon
2 tbsp chopped nuts, if desired

Heat oven to 350 degrees F.
Coat 8 or 9 cups of a muffin tin with cooking spray or vegetable oil.
Mix flour, sugar, baking powder, baking soda, and salt in a bowl.
Mash bananas and mix with egg, butter spread, buttermilk, oil, and vanilla extract in large bowl.
Gradually add flour mixture and stir until blended.
Add 1/3 cup chopped nuts, if desired.
Mix brown sugar, cinnamon, and nuts (if desired) for topping.
Fill muffin cups 3/4 full.
Sprinkle brown sugar-cinnamon mixture on top.
Bake until a wooden pick inserted into center of muffin comes out clean, about 20 minutes.
They are lovely served warm with a little butter.

*If you don't have buttermilk,  you can make some by adding a few drops of vinegar to regular milk.
