...the cipollini.
 Allium cepa Borettana and an unexpected new  addition to Marissa's orchard and farm shop.
They are tiny, donut flat in shape and an Italian heirloom variety originating in the Italian town of Boretto in the Reggio Emilia province of Italy.
An area also famously known for "Prosciutto of Parma” ham and “Parmigiano Reggiano”.

Now that is quite a heritage!


A handful of the pocket rockets were popped in with a weekend roast skin and roots attached! 
Deliciously caramelized...yummmm.
