This time of year everybody is trying to process summer crops of veg and fruit to last through the winter. I was reluctant but then my neighbour came with bucket of cucumbers, bundle of huge dill and several horseradish roots - all the ingredients to make cucumbers in brine. They will be ready to eat in a couple of weeks. But they will last unopened until winter and further. Today she brought me some more. I will go tomorrow and buy more jars to put them in...
