Runebergin tortut

Yesterday was "Runeberg's day" in Finland. J.L. Runeberg was a Finnish author, poet and journalist. He liked this kind of pastries and tpeople bake and eat them on 5th Feb (which is his birthday).

I made these with my girlfriend. I chose to post this shot where the jam is sliding down the pastry.

As requested, here's the recipe:

200 grams margarine/butter
0,5 dl sugar
1 dl brown sugar
1 dl cream
2 eggs
¾ dl (50 g) minced almonds
3,5 dl wheat flour
1,5 dl minced biscuits
1,5 tsp baking powder
1,5 table spoon cardamom

punch/liqueur based on arrack or almond liqueur or rum

coating
1 dl raspberry jam/marmalade
powdered sugar
water

Froth butter/margarine and sugars. Add eggs one by one. Combine dry ingredients and mix them and cream into dough. Dose dough into muffin moulds (about 20 pieces). Make little holes on top of the pastries (thus you avoid the jam sliding down the pastries as in the pic). Bake the pastries in oven in 175 C about 20 min.

Moisten the pastries with water combined with punch/liqueur based on arrack, almond liqueur or rum. Wait until pastries have cooled off. Combine water with powdered sugar and coat the pastries with that and raspberry jam/marmalade.
