Linguistic prowess somewhat lacking

It has been many years since I made erm aubergines panés, panned aubergine, maybe fritters ah the words escape me.

Had no breadcrumbs but managed to broyer an aging roll and following a recipe added a bit of parmigiano. Which suddenly makes me want to make parmigiana.

Resulting dish wash very tasty. Aubergines are still the favourite vegetable round these parts
