queen scallop...

...The Ghan is preparing for its next journey and I am now happily ensconced in Adelaide with T who flew in this morning.
Adelaide carries a 'sleepy city' tag with it but goodness knows why!
The city is so cool, easy to get around with laneways throbbing with fab locally sourced food  and delicious local Barrosa and Clare Valley wines.

Being a 'researcher' we had zeroed in on a couple of places to try one of which  ' blend smoke, steam, and fire; ancient traditions of Japanese yakitori, with the finesse, skill & texture of all that is raw, cured, pickled and fermented.'

There was certainly smoke steam and fire and we had a front seat view of the kitchen which was bustling!

This queen scallop was the 'dish of the night.'
Hand collected from the waters around Kangaroo Island the scallop was served raw with a drizzle of apple dashi.
Its taste and scent was that of the ocean...spectacular.
