On the menu to night we have ...Stuffed Chicken Thighs courtesy of the lovely JayBee My planned chicken in white wine hotpot tasted lovely but looked a bit like vomit on a plate wasn't very photogenic - so JayBee came to the rescue!

Earlier this afternoon I was chatting with MrsCats&Dogs and said I was off to do "something" with thighs in the kitchen (no sniggering at the back) .. she immediately replied "try them stuffed with cheese and bacon"
We had a discussion about what kind of cheese and whether it would be good to wrap bacon round outside as well/or instead.
I decided on feta cos I thought the saltiness would help season the chicken from inside. And no bacon on the outside cos MrsC&D mentioned "crunchy, crispy skin" and that made my mouth water just thinking about it LOL
This was the result.
Tasted fab! :-)

Recipe:
Ingredients ... 1kg of chicken thighs , 150g Feta cheese, 5 rashers of back bacon, oil spray, salt + pepper.
You also need some wooden cocktail sticks.
Heat oven to v.hot (gas 6/7)
1. Remove bones from thighs, keeping the thigh whole and the skin on
2. Cut small sticks of feta the same width as the thighs.
3. Cut bacon in half lengthwise
4. Wrap each stick of feta with bacon
5. Put feta and bacon across thighs and wrap the chicken round to make a parcel
6. Secure with cocktail sticks if you need to
7. Put in a deep baking tin (join side down)
8. Lightly spray with oil
9. Season with a little salt and lots of fresh ground pepper.
10. Whack in oven for 40 - 45 mins.
The feta did release a fair bit of water so I drained it off about 10 minutes before I was ready to serve the chicken, just so the bottom bits had a chance to brown a bit.
