Ever since I watched the movie, Forks Over Knives, I've been eating a vegan diet, I went to the grocery store and bought vegetables, I convinced the Mister it was a good idea (at least at home), I made soup and salads and oatmeal...then came our usual Sunday morning brunch date. I thought it was going to be near impossible to enjoy brunch without meat or dairy (isn't that what brunch is?) but behold the beauty of this, "vegan eggplant napoleon" from the Farmhouse Restaurant. It was even more delicious than it looks.

I could get used to this...
