Anne's Daily Encounters

By dutchdelight

Combing was part of our hard day's work too

Harvesting olives isn't just shaking the tree and counting on the olives falling down... it's also knocking them out from the trees with a lookalike fly swatter and it's combing them off from the branches! The combs we used for the lower branches coz it's impossible to get a comb into the high up branches. Tomorrow will do as last day of harvesting in this field on the hilly slope and then Thursday or Friday the olives will be centrifuged to get the olive oil out from them.
In older times, and as how I remember it being done, the olives were crushed and pressed between turning stones to get the oil out; thus the olive pit was also crushed and its bitter taste got into the olive oil, now that bitternes is lessened by the centrifuge proces of the present.
