I had a terrible moment today where I forgot the recipe for self raising flour, which I have been using pretty much weekly for the past ten years. I googled it, and some chick with a fancy blog opined that it was 5% baking powder. It looked legit and I couldn’t find my proper notes on the topic, so I went ahead. After THREE AND A HALF hours in the oven, a weird fluffy mess. Found my notes: it’s 2% baking powder. That’s 15 eggs I won’t see again in a hurry. Sighs.
