Carrot cake porridge

My uncle posted a recipe for carrot cake porridge on YouTube.  It sounds crazy, but, because it was my uncle, I tried it.  I used the food processor's fine grating disc for the carrot and topped the finished porridge with maple syrup rather than brown sugar.  Mr Pandammonium and I both enjoyed a bowl of it.  I shall make it again.
