KatiePie is tonight's supper club guest!

I've been meaning to make this for ages and to be honest I'd have been happier with last night's Supperguru blip of jacket spuds tonight as I'm soooooo cold, but I had the stuff in for this so here it is:

Jamie's 15 min meals - Chicken Tikka, Lentil, Spinach and Naan salad.
Changed a bit
Serves 2

1 large chicken breast
1 heaped tsp Pataks Tikka paste
2 chestnut mushrooms

2 spring onions
Half a red chilli
¼ tsp cumin seeds
½ tsp mustard seeds
½ pack of ready to eat Puy Lentils
3 cherry tomatoes
Red wine vinegar
A bunch of coriander
1 lemon
2tbsp natural yoghurt
1 tbsp cashew nuts
A heaped ½ tbsp of mango chutney
½ tsp turmeric
1 naan bread
100g baby spinach
Little Gem lettuce
1 carrot
30g feta cheese


Coat the chicken in tikka paste, salt & pepper, cover with greaseproof paper and bash with a rolling pin until 1.5cm thick
Put onto a smoking hot griddle pan with thickly sliced chestnut mushrooms
Turn after 4 mins
Make sure they're nicely charred and cooked through

Trim and finely slice the spring onions and half of the half a chilli

Put mustard and cumin seeds and 1 tbsp of oil into a hot frying pan followed by the sliced spring onion and chilli

Tip the lentils into the pan followed by roughly chopped cherry tomatoes and add a pinch of salt and pepper and a splash of red wine vinegar. Toss occasionally for a couple of minutes then turn off the heat.

Put coriander stalks, juice of half the lemon, yoghurt, cashew nuts, mango chutney and turmeric into a liquidizer and whizz until smooth

Remove the cooked chicken and mushrooms and put the naan onto the pan to heat through..

Put the spinach and baby gem onto a erving dish, scatter over the lentils, speed peel the carrot over the top and sprinkle on the mushrooms.

Slice the chicken, naan and remaining chilli and arrange on top then crumble on the feta and drizzle the dressing over.

Top with coriander leaves and serve with lemon wedges.



It might not have been pretty but it was DEEEEEEEEEEEELISH!
