Paneer Bhuna

Tastes an awful lot better than it looks at this stage of cooking.

Really really tasty and even easier to make.

Finely chop two onions and fry then in 120ml of oil.

When the onions are soft add in 2 tsp of salt, 1 tsp of chili powder, 1.5 tsp of ground coriander and 0.5 tsp of turmeric and mix through well.

When the onions are well coated add in 2tsp of ginger paste and 2 tsp of garlic paste.

Cook this through for a few minutes then add in 2 chopped tomatoes.

Cook all this down until the tomatoes are reduced and teh oil starts to deparate.

Add in a couple of packets of paneer chopped into cubes and lightly fried until golden.

At this stage you can add in chicken or lamb instead of the paneer but if you are adding meat add it raw and cook it through until well cooked.

Add in 120 ml of water and stir it through well then cook gently stirring all the time until the water has all been absorbed and you are left with a thick sauce.

Finally mix in half a teaspoon of garam massala and garnish with chopped fresh coriander and two finely sliced fresh chillis.

Takes about twenty minutes in all and tastes better than takeaway bhunas.
