Daddy's Specialty.

As a girl my dad was the baker (when he was around) and one of the firm favs was Bermuda Lemon Bread! A deliciously fragrant lemon loaf cake with walnuts.

Perfect with a slathering of butter!

Ingredients:

180g / 11/2 cups flour

80g / 3 oz butter

200g / 1 cup sugar

2 eggs

120ml / 1/2 cup milk

1 tsp baking powder

1/2 tsp salt

30g / 1/4 cup walnuts, chopped

1 lemon

65g / 1/3 cup sugar

Directions:

Grease and flour 1 loaf pan.

Heat oven to 180C / 350F.

In a medium size bowl combine flour, baking powder and salt. Put to one side.

Grate the rind of one lemon and set aside.

Squeeze the juice of one lemon and set this aside.

In a large bowl, cream butter and sugar.

Add the eggs one at a time beating well into the mixture.

Beat in the milk and lemon rind as well as the walnuts.

Gradually add the dry ingredients from the medium size bowl and mix well.

Now pour into the loaf pan and bake for 1 hour.

Add 65g / 1/3 cup sugar to the lemon juice. Mix well.

When the bread is done remove from the loaf pan. Pour lemon and sugar over the bread and allow to cool before serving.

Delicious!

Alternative method is to sift all dry ingredients into bowl. Then rub in butter til the mix resembles fine bread crumbs. Then add milk and eggs and finally lemon rind and walnuts. (I use this method)
