Durham Vegan banana loaf.
My daughter and I were looking up recipes for vegan cake. There were some ingredients that we don't have for example ground flax seed . I looked in a very old recipe book and found a banana loaf cake that has all vegan ingredients except the fat. We are going to use a vegan spread as a substitute for the fat. I don't know what the cake will turn out like but we are going to give it a go. The cake is going to be a sharing gift for friends.

If you want to make the cake rub the fat into the flour. Add the dry ingredients and mix. Add the mashed banana. Cook in a medium oven- 190°C, gas 5, 375°F -for about 30 mins, then turn down to low- 160, gas 3, 325 for 45 mins . Keep an eye on the cake near the end of the cooking time as time may vary slightly depending on the loaf tin .

Post script- more sugar is needed -150g and vanilla extract to add to the taste. See the next 2 days of blips.
