I made soup in the soup machine for lunch today, partly to use up some of the leftover Christmas veg — I always get too much — and partly because Mr Pandammonium was in bed with a serious case of the sniffles and I thought this would be a good way to get some healthy vitamins into him.
Ingredients included a veg stock cube, fresh(ish) herbs, umami salt, parsnips, potatoes, chestnuts and carrots. Then I thought it might be a bit thick, so I wondered what I could add, other than more water. Mushrooms, of course: they’re watery.
I garnished it with chives and served it to the patient with some wholemeal bread.
I think he liked it, although it did need more salt.
