National Pisco Sour Day in Peru

The first Saturday in February, Peru time, so still current till about 4.00pm Sunday, Blackheath Oz time.
Since we could, we did.
Well whipped egg white, lime juice, sugar syrup (1:1), a dash of bitters and Pisco, of course – Peruvian, for preference.
Proportions are highly variable (I found 17 different versions in a quick google search), according to taste and according to whether Peruvian (the Original) or Chilean (the Usurper) – or U.S. (the Pretender) ...
I got the last bottle in Dan Murphy's Katoomba (apparently there's been a bit of a run on Pisco lately. The weather, maybe?)
Peruvian Barsol Quebranta.
Very nice, very expensive, 41.3%. 
One is now no longer even pretending to be sober...
