A Good Roasting

On a Monday???


Oh yes!


The BEST roast chook in town I'd say!


It's all about the stuffing!

And the baste .... I mix butter, lemon rind, lemon juice and garlic into a paste and smear it in between the skin and the breast meat ... I also turn the bird onto it's back half way through, before puttinh it right way ip to crisp the skin ...

Stuff the cavity with the lemon halves and a few sprigs of thyme or rosemary, good sprinkling of salt and pepper and it is just so juicy.


The Christmas Turkey gets the same treatment and is always delicious!
