Spiced plums and ginger cream

It really was time to do something with the plums in my fruit bowl. I've been patiently waiting for them to soften up from rock hard which is how they were when I got them in my veg. box delivery. No such luck. Today, I caved in and gently stewed them in star anise, cinnamon and pomegranite juice.

The ginger cream is made with cashews, dried peaches, and grated ginger, sweetened with xylitol.
